Guadalajaran Swiss Chard Quesadillas
Serves 4   30 min Prep
From Vegetarian Times
  • 2 Tbs vegetable oil
  • 1 sm onion, chopped (¾ cup)
  • 2 cloves garlic, minced ( 2 tsp)
  • jalapeño pepper, minced
  • ¼ tsp cumin seeds
  • ⅛ tsp oregano
  • ¼ cup tequila/other cooking fluid
  • 12 oz. Swiss chard leaves
  • 8 6-inch corn tortillas
  • 1 cup grated cheese
  • Add cooked meat as desired
1. Heat oil in pot over medium heat. Add onion. Sauté 5 minutes. or until golden. Stir in garlic, pepper, cumin & oregano. Sauté 2 minutes. Add tequila. Simmer 1 minute, or until liquid has evaporated. Stir in chard. Cover, reduce heat to medium low. Steam 5 minutes, or until chard wilts. Uncover. Cook 3 minutes, or until liquid has evaporated.
2. Place 1 tortilla in skillet over medium heat. Sprinkle with 1/4 cup cheese. Top with 1/4 chard mixture & second tortilla. Cook 2 minutes per side, or until browned. Repeat with remaining ingredients. Slice into wedges.
Easy "Kohl" Slaw
This is a delicious and easy way to enjoy kohlrabi. It's a perfect side to grilled meat or fish. Serves 4-6. From About.com
  • 2 medium kohlrabi, peeled, shredded
  • 2 small carrots, shredded
  • 1 tbsp shredded onion
  • 1/3 cup white vinegar
  • 1/3 cup granulated sugar
  • 4 tbsp olive or canola oil
  • 1/2 tsp salt
  • 1/4 tsp celery seeds
  • 1/8 tsp pepper

Combine the kohlrabi, carrots & onion in a bowl. Combine the remaining ingredients & blend well. Pour over the shredded vegetables. Toss to coat well. Cover & refrigerate for at least 2 hours.
