Greetings Market Friends,

The time has drawn near for children to go back to school. It seems like just yesterday that we kicked off summer during Memorial Day picnics. How time flies. Next week, we will host our Children's Festival/Back to School festivities. I will write extensively about that next week. This week, as you will read below, we will have many more tomatoes, corn, eggplant...all the things that remind you of summer. Our corn is great! Steamed or grilled it is a fabulous stand alone, fuss free side dish. I have been known to eat two ears as my whole dinner :) Come and pick some up Saturday. And check out all the other treasures our farmers have harvested.

From Bread of Life Bakery:

This week has been a week of canning tomato sauce, jam making and canning sauerkraut. We really love having these wonderful veggies in the winter and knowing they are local or homegrown. This weekend we will have organic fair trade coffee from Puddin Head, berry and pecan scones, fruit bars, breakfast burritos, meat with Benedict Builders sausage, vegetable burritos and spinach quiches. We have our usual whole grain breads made with locally grown, freshly ground organic whole grains so you get a good source of fiber and other nutrients such as selenium,potassium and magnesium. The refined flours are low in fiber and are still missing some nutrients and minerals since they only add back a few in the enriched flours. Whole grains are healthier and truly the staff of life.

This time of year, all farmers want to talk about is TOMATOES. I don’t know how tomatoes got to be one of the main crops that make a farmer’s heart go pitter patter, but they do. Our harvest peaked last week- we harvested probably 1,000 pounds of tomatoes! They’ll begin to slow down now because of the heat and all the classic Midwestern tomato trouble are beginning to show up- early blight, septoria, bacterial speck- plus of course the hordes of grasshoppers and tomato worms that can get to be biblical in proportion, but the lovely flavors will continue! There really is something special about a good tomato.
We’ve spent the week in the field mostly pulling weeds and cleaning up, trying to get out from under the harvesting and be a tad more proactive about things. (What can you do? When there are 1,000 pounds of tomatoes screaming to be harvested and hundreds of pounds of potatoes that have to be dug, you gotta deal. And, frankly, harvesting a 3 pound tomato is a much more fun proposition than wrestling with Johnson grass and foxtail….) With lots of extra help, the farm is starting to look a bit more civilized these days, and next week will be a big week for getting another good round of planting done for our fall crops. And the temperatures hopefully will be a bit more civilized next week too!
So, indulge in tomatoes while you can. Salsas, gazpacho, simple salads, tomatoes with pasta, roasted tomatoes, do it all! And, just for some variation, consider some cooling salads made from shredded zucchinis and summer squashes, cold soups with potatoes and leeks, lightly cooked carrots, pickled beets, salty nutty edamame, it really is a feast at the market waiting to happen!

East Winds Gardens:

Hello Brooksiders,

The TOMATOES have finally arrived! It's time to get them while the getting is good!--my mother-in-law helps me 'put up' the seconds so I have them in the winter! Nothin/ better than opening a jar of SUMMER for soups or stews or chili in the dead of January! I made what I call Magmoor with our EGGPLANT this past week--so good! Just dice up eggplant(no salting necessary) diced CANDY ONION, TOMATOES, saute in olive oil with about 2 teaspoons of cinnamon and a can of chick peas(strained)--I ate it hot, cause it looked and smelled so good, but I think it's meant to be served cold with pita bread for dipping! We have 4 or five varieties of eggplant and I have found that the white eggplant is a bit creamier/smoother in texture--they're all firm and good for what ever eggplant dish you choose--the best time to eat eggplant is when it is in season!

We'll also have POTATOES, CHERRY TOMATOES, PEPPERS, BLACKBERRIES, SUMMER SQUASH of all shapes and sizes, CUCUMBERS, FENNEL AND HERBS. Also, don't forget to pick up one of our beautiful bouquets for your table!

New Roots for Refugees Farm:

What a great week! It started out a little hot, and our farm sure felt it. Monday and Tuesday were slow movin' days for New Roots. Wednesday, on the other hand, brought us alive again. Wednesday morning was one of those days that I will remember for a long time. Every grower was out working in brightly colored dresses, children were playing tag in the field (and I was trying to keep them out of the tools!) and I got to taste some delicious multi-colored sweet corn. I've never had anything like it before!
Hopefully, we'll have some of that as well as tomatoes, peppers, eggplant, beans and oh so much more over at the New Roots tent. Stop by and say hello!

A few recipes to inspire your market shopping list:

Grilled Corn with Chili Lime Butter

Gluten-Free, Vegetarian

Chili lime butter adds a delicious finishing touch to grilled corn on the cob. Perfect to accompany any barbecue gathering, large or small. The butter can be flavored one day ahead and then brought to room temperature before serving.

Serves 6

  • 6 tablespoons (3/4 stick) butter, softened
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon grated lime peel
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon jalapeño, minced (or to taste)
  • pinch of salt
  • 6 ears corn on the cob in the husks

Place the butter in a small bowl, add the chili powder, lime peel, lime juice, jalapeño and salt. Mix well. Shape the butter into any form you like, cover and place in the refrigerator until ready to serve.

Heat grill to medium-high.

Place corn (in husk) on the grill, rotating the corn so you cook on all sides, for approximately 15 minutes total. Remove from grill and cool slightly (so you are able to peel the husk). Place corn back on grill over the same flame for about 4 minutes, once again rotating the corn for even grill marks.

Serve the corn immediately with the chili lime butter.

Cooking options: Place the corn (in the husk) on a plate and microwave for 5 minutes (2 1/2 minutes per side). When ready to grill, remove the husks and grill over a medium-high flame for about 2 minutes per side.

Per serving (125g-wt.): 200 calories (110 from fat), 12g total fat, 7g saturated fat, 4g protein, 25g total carbohydrate (3g dietary fiber, 4g sugar), 30mg cholesterol, 35mg sodium

Pan Seared Summer Squash with Fresh Basil & Lemon Vinaigrette

Dairy-Free, Gluten-Free, Vegan

Thick rounds of summer squash seared in a piping hot pan — cast iron is best — until just blackened, then tossed with a fragrant fresh basil and lemon vinaigrette.

Serves 4

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh basil, chopped
  • 1/4 teaspoon sea salt
  • 2 large green zucchini

Make the vinaigrette: In a small bowl, mix together the olive oil, lemon juice, lemon zest, fresh basil and salt.

Make the zucchini: Slice the zucchini into large rounds. Warm a 10-inch skillet (cast iron is best) until very hot. Place the zucchini in pan and sear over high heat, until blackened, 2–3 minutes. Flip onto other side and sear additional 2–3 minutes, until both sides are blackened.

Place zucchini on a large platter. Spoon vinaigrette over zucchini. Serve warm.

No really, in all seriousness, eggplant is one of life’s under rated pleasures. People just don’t know how to prepare it. I have included a recipe to get you on your way.

For those of you wanting to bust out that grill sitting in your garage:

BABGANOUSH

SERVES 6

Ingredients
• 1 large eggplant
• 1/4 cup tahini, plus more as needed
• 3 garlic cloves, minced
• 1/4 cup fresh lemon juice, plus more as needed
• 1 pinch ground cumin
• salt, to taste
• 1 tablespoon extra-virgin olive oil
• 1 tablespoon chopped fresh flat-leaf parsley
• 1/4 cup brine-cured black olives, such as kalamata
Directions
1. 1
2. Prepare a medium-hot fire in a charcoal grill.
3. 2
4. Preheat an oven to 375°F.
5. 3
6. Prick the eggplant with a fork in several places and place on the grill rack 4 to 5 inches from the fire.

8. Grill, turning frequently, until the skin blackens and blisters and the flesh just begins to feel soft, 10 to 15 minutes.

10. Transfer the eggplant to a baking sheet and bake until very soft, 15 to 20 minutes.

12. Remove from the oven, let cool slightly, and peel off and discard the skin.

14. Place the eggplant flesh in a bowl.

16. Using a fork, mash the eggplant to a paste.

18. Add the 1/4 cup tahini, the garlic, the 1/4 cup lemon juice and the cumin and mix well.

20. Season with salt, then taste and add more tahini and/or lemon juice, if needed.

22. Transfer the mixture to a serving bowl and spread with the back of a spoon to form a shallow well.

24. Drizzle the olive oil over the top and sprinkle with the parsley.

For my Crazy “RAW FOOD” Customers:

Raw Eggplant Caponata

1/2 eggplant cut into 1/4" dice
salt
1 tbs. lemon juice
2 roma tomatoes, cut lengthwise, flesh scooped out
1/4 cup sun-dried tomatoes soaked in water for 30 minutes
3 tbs. minced red bell pepper
3 tbs. minced celery
2 tbs. minced green olives
1 tbs. pine nuts
1 tbs. fresh currants (or raisins)
1 tbs. lemon juice (or 2 tsp. of apple cider vinegar)
1 tsp. raw agave
2 tsp. nama shoyu
1 tbs. chopped basil
1 tbs. chopped parsley
black pepper

Add 1 tsp. salt to the diced eggplant in a colander, toss to coat and let drain for 30 minutes. Rinse eggplant and pat dry with paper towels. Put the eggplant in a small bowl and add lemon juice while you're prepping the rest of the veggies.

Scoop out the tomato flesh from the tomato half and add to a large bowl with the celery, sun-dried tomato, red bell pepper, currants, pine nuts, green olives, basil, parsley, olive oil, lemon juice (or apple cider vinegar), nama shoyu, basil, parsley and black pepper. Drain the eggplant, add to the mixture and stir to combine. Check for seasoning.

Stuff the tomato halves with the eggplant mixture and dehydrate for 6-8 hours at 105F.

Greetings Market Friends,

I think we all agree that the Tomato Festival last week was a huge success! I hope you all got to stop by and sample some of Jasper's terrific tomato treats. He did a wonderful job! The vendors all had a great selection of tomatoes, as well as other summer garden treasures. This week you can look forward to much the same. As you will read in the farmers' section below, all the crops are in full swing. A new favorite of mine are the blackberries from East Winds Gardens. They are the best I have ever had (seriously). Not too tart, not too sweet. Just right with your cereal, yogurt, ice cream or straight out of the carton. Blue Door Farms also has peaches in season. I promise if you try our fruit, you will swear off the grocery store imports for good.

Speaking of grocery stores, did you know the average grocery store product item travels 1500 miles to make it to your cart? There was an article in the Star this week discussing this very topic. I am not sure how "fresh" food can be if it travels that far by air or land (I know I am not very fresh myself after a flight back east :)) Along these lines, we are also looking for a couple of community volunteers to help us with a little research. From Bread of Life Bakery:

The week has been a busy one with Bryce and Lili keeping us all going at the bakery. Bryce loves the cinnamon rolls and likes to have them around to snack on at all times. I think his Mommy is not totally for that. He will have to switch off with Potato Bread since he likes to have that
shipped out to him in California. We are having our farmer deliver some of our wheat this week. Harvest has been good for him and the variety he grows does well for him in Kansas.

We will have our market burritos, meat (sausage) and non meat, quiches with smoked grueyre cheese and cheddar, coffee (Puddin' Head), rolls, bars and a variety of breads.

Today, one of our employees came in and said, "Hey Dan, you'll never guess what I found beneath all that grass you told me to pull!" I shrugged my shoulders, "Beats me."
"HERBS!!", he exclaimed. Yes, one could say the weeds have gotten a little out of control here at the Kansas City Community Farm. Of course, we've taken great care of the best crops, and others have fallen by the wayside. Some of our least popular crops are completely lost in weeds. Our apprentices are more like archeologists. Snakes have become a common find in these weeding expeditions. But we're pushing through (with some extra help) and, we'll be out of the thicket in no time.
This week, we'll still have plenty of TOMATOES at market (even if the rain cracked some). You can eat those tomatoes with some BASIL. We'll also have other summer crops like ZUCCHINI and SUMMER SQUASH, EGGPLANT, PEPPERS (both sweet and hot), and TOMATILLOS. We'll have a few more fabulous MELONS, as well as plenty of roots like BEETS and CARROTS (of many colors). You can load up on CUCUMBERS, and we'll have a pretty good harvest of EDAMAME and OKRA.
Summer brings so many exciting crops. Please don't miss them!

Yup, I have more peaches. :) These are from the taller branches, and many are larger than last weeks. They've had a little longer to grow and sweeten up.
My tomatoes have also finally kicked in, so I'll have a mix of field grown Big Beef, Cherokee Purple, Mountain Gold, Jet Star, Brandywine, and more.

New Roots for Refugees Farm:

The growers at the New Roots for Refugees farm have been hard at work for the past two months growing yummy vegetables just for you! We are an urban, training farm located in Kansas City, Kansas teaching refugee women from Somalia, Burma and Burundi how to grow vegetables here in the United States.
We are so excited to be a part of the Brookside Market. This week we will be offering a variety of produce; SWEET CORN!, lettuce, tomatoes, cabbage, okra, green beans, squash and peppers! All of it has been grown with love and heart and a lot of hard work.
Please be patient with us, as many of us are brand new to the United States and speak very little English. We do want to learn, though! So stop by, introduce yourself and see all of the delicious things we have available.

A few recipes to inspire your market shopping list:

Rosemary Roasted Potatoes

Dairy-Free, Gluten-Free, Vegan

Serves 6–8

  • 8 medium sized red potatoes
  • 2 tablespoons canola oil
  • 3 tablespoons fresh rosemary, or 2 teaspoons dried
  • salt and freshly ground pepper to taste

Cooking Method #1
Preheat oven to 375°F. Quarter potatoes and steam for 5–8 minutes, until slightly tender. Put potatoes in a mixing bowl and coat with oil. Sprinkle with rosemary, salt and pepper. Place evenly on baking sheet and bake for 30 minutes, turning occasionally.

Cooking Method #2
Preheat oven to 375°Fs. Quarter potatoes, put in a mixing bowl and coat with oil. Sprinkle with rosemary, salt and pepper. Place evenly on baking sheet and bake for 1 hour, turning occasionally.

Baked Zucchini with Goat Cheese

  • 8 medium-sized zucchini
  • 1 tablespoon olive oil
  • 3–4 ounces goat cheese, sliced thin (a milder cheese will also work)
  • one bunch of fresh mint, chopped
  • black pepper

Preheat oven to 350°F. Cut out 8 squares of foil (big enough to wrap each squash) and lightly brush with oil. Cut a slit along the length of each squash and insert slices of cheese. Add some chopped mint and sprinkle with olive oil. Wrap each zucchini individually and bake for about 25 minutes, or until tender. One variation is to omit the mint and baste the cheese-filled squash with crushed garlic infused olive oil, using a fresh rosemary basting brush. If cooking outdoors, these can also be placed on the grill.

OK, this weeks recipe captures the essence of summer. It is simple and light screaming with farm-fresh flavor:


CAPRESE SALAD:

  • 3 BADSEED FARM HEIRLOOM TOMATOES, 1/4-inch thick slices
  • 1 pound HERITAGE FARMS fresh mozzarella, 1/4-inch thick slices
  • 20 to 30 leaves (about 1 bunch) BADSEED basil
  • Extra-virgin olive oil, for drizzling
  • Balsamic vinegar, for drizzling (optional)
  • Coarse salt and pepper
Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and balsamic and season with salt and pepper, to taste.

Farmers’ Community Market at Brookside



Greetings Market Friends,

It has been a true joy to see the fruits of the labor of our farmers come to be in the form of summer produce. Katherine writes very eloquently in the farmers’ section about the joy of the summer tomato. I cannot agree with her more. I, myself, have had a great time this summer with my first garden. It has been a real miracle to watch seedlings turn to vines, then to fruits and vegetables, then to our dinner table. I hope you all will come and see what all our vendors have to offer. Don’t miss many of summer’s best pleasures!

Remember also, our tomato festival is coming up on July 26th. It will be a great day at the market with many exciting additions to our usual line-up, including a cooking demonstration by Kansas City’s celebrity chef, Jasper Mirabile. We will be sending more information in the days to come, so stay tuned!

This week for your musical entertainment, we will have Nick Baker. Come have a breakfast burrito, some coffee, and enjoy the morning the Brookside way!

From Bread of Life Bakery:

Hello market friends,

Our warm weather has finally come and our bakery was very hot with two ovens going and the hot days starting. We have been enjoying the nice weather longer than usual and I was ready for it to stay that way!

The market burritos will have local vegetables, squash, spinach, potatoes from wood Mood Gardens, onions and farm fresh local eggs. Our meat burritos will have Benedict Builders’ sausage added to the mixture. Quiches, raspberry bars, cinnamon rolls, cookies and breads will also be available. Have breakfast at the market and visit friends and vendors while you shop.

Luke and Chris have had a busy week finishing hay and delivering hay to a family with a new horse. Haying is hard work in the heat so market day is a time for them to slow down and enjoy a beautiful day at the market with music and visiting with their market customers/ friends.

From the KC Center for Urban Agriculture:

Oh, tomatoes, lovely tomatoes… Glossy red, radiant orange, sultry pink, and, my favorite, the wonderful mahogany of Cherokee Purple. The tomatoes are just beginning to hit their peak, for the next few weeks you can expect abundance, beauty and unbelievable flavor! Slice them up with buffalo mozzarella or any fresh, slightly salty cheese, toss some basil and balsamic on them, and you have the most perfect dinner.

If there were no other arguments at all for local agriculture (and there are many J), tomatoes alone would do it.

For an even more perfect dinner though, add some homemade croutons from bread from one of the market’s bread vendors to the tomato salad, make a local three bean salad using our Tri-Color mix and boiled baby potatoes, and toss our salad mix with a light dressing. Now there is a summer meal.

This time of year, you can be the most fabulous cook with the least amount of effort, local fruits and vegetables are all you need!

Other ideas for cooking this week:

Julienned cucumbers, kohlrabi, and turnips salted and marinated in vinegar and oil. Perhaps with a bit of tarragon or winter savory.

Swiss chard braised with the unbelievable garlic that is just really coming along.

Lightly steamed cabbage as a bed for lamb, beef, or chicken.

Cold roasted baby beets and carrots.

Finely diced zucchini, summer squash, cucumbers, and onions “quick pickled” in vinegar and salt. (Make a lot of this, you’ll want to eat it all week.)

Oh, and eggplant! These are coming on some-kind-of-gorgeous! Slice them in half, brush them with oil, roast them in the oven, then mash up with some salt, pepper, garlic, and oil, (and tahini if you have it on hand) and you have a cooling spread for sandwiches or roll-ups.

Just decide that your “recreational” activities over the coming weeks are going to be cooking! Forget the movies, going out to dinner, or browsing at the mall, this is the time of year to just cook and eat and be grateful for real, good, local food.

Hello fellow coffee drinkers! George and I returned on the 4th from an extended vacation to the Northwest and were a bit tired on Saturday but it was good to see everyone. We drove over 2000 miles in a rental car on our "vacation" so needed to come back home for a rest.

George has been roasting like crazy and on Saturday we will have our usual Rainforest Blend and Toby's Decaf but will be offering Mexico Chiapas and a new coffee called Blue Ridge Blend which we are excited about. George is describing it as bold and full-bodied with "hints of cinnamon and nutmeg". We are on the last of our Ethiopia Yirga Ch'efe but have an order for Ethiopia Sudamo coming any day and hope to have that roasted by Saturday.

Green Dirt Farm:

This week at the market we will have some beautiful frenched Racks! We also have legs available, both bone-in and boneless. Arrive early for sausage as we only have two packages left. Our ground lamb makes yummy gyro burgers and to make it easy, we have a recipe!

The KCCUA folks were kind enough to provide several recipes in their section of the newsletter, so I will throw in one more for good measure:

Summer Squash Fry

· 2 tablespoons olive oil

· 1 onion, chopped

· 2–3 crushed garlic cloves

· 4–5 medium sized zucchini or other assorted summer squashes

· 1/4 cup chicken or vegetable stock

· 1/2 teaspoon chopped fresh oregano

· dusting of grated cheese

· chopped fresh parsley as garnish

Sauté onion and garlic in the olive oil until onion is barely softened. Add squash and stir-fry a minute or so. Stir in the stock and oregano and simmer gently until the liquid has almost evaporated. Serve, dusting with cheese and garnish with parsley. For additional color, add chopped red bell pepper to the mix.
