Dearest Connoissuers of Conscious Cuisine -

HO HO HO! This is Farmer Brooke (aka Santa Claus) and boy oh boy do I have a gift for you. This Friday at the BADSEED "Happy Holiday" Farmers Market Fiesta from 4-8 PM I will be raffling off a delicious FARM BASKET full of local/organic delights including free-range meats, artisan sheep's milk cheese, gourmet mushrooms, eggs, organic produce, winter squash, micro-roasted coffee, rustic bread,baked goods, and more.......(compliments of your oh so dedicated farmers that you so graciously support week after week). This is our way of saying Merry Christmas, Happy Hanukkah, Happy Kwanzaa or plain old THANK YOU for a wonderful season. We make a living "in the dirt" and it aint easy. Sometimes "dirt" is all you have to show for it!! But, if it wasn't for your loyal patronage, all us farmers would have thrown in the towel long ago. Keep eatin' and we'll keep on growin'!

Other festivities will include:

Irish Coffee compliments of the BADSEED's. That's right.....get tipsy with the farmers! I will provide Irish Whiskey, organic sugar, and whipped Shatto cream so you can "dress up" your Puddin' Head Coffee. YUM!! I will also provide a few bottles of local white and red wine. Feel free to bring contributions to the bar, if you'd like. Last year you "booze hounds" tore through that whiskey like there was no tomorrow. I didn't know you "local foodies" had it in ya! I will attempt to be better prepared this Friday, but the pocket book can only handle so much. (years down the line, when our orchard is in full swing, we will provide homemade Apple Brandy.....mmmmmm).


Holiday Recipe Round-Up
Local Foods should champion any meal especially your Holiday Feast!! Here are a few suggestions based on in-season ingredients that can be found at the BADSEED Market this Friday:

I am an eggnog fiend and this recipe is simply to die for! Ever since I got laying hens I have been in "eggnog heaven". This is nothing like the store bought stuff and it will leave your guests screaming for more (with silly eggnog mustaches adorning their eggnog crazed faces). Use free-range eggs from PJ's Mushroom Farm and local dairy products from Shatto or Green Hills Harvest. Triple this recipe for larger holiday gatherings. It is excellent "virgin" and even better "spiked". **I substitute half & half for the heavy whipping cream. I have tried it both ways, and the half & half makes a lighter, more pleasing nog in my opinion. However, either way is great. Go wild.

I made a chestnut stuffing for Thanksgiving featuring fresh, organic chestnuts from Chestnut Charlie. It was off the radar. In addition to roasted chestnuts, I used a few ingredients from my field including leeks, fennel, and apples. I loosely followed the recipe I have included from Whole Foods which features cranberries and shallots. The point is - you can IMPROVISE! The chestnuts are the main ingredient that cannot be compromised, but you can throw in whatever you happen to have lying around the kitchen or whatever is in season. Lots of herbs and high quality Shatto butter make a huge difference. ** I use a combo of day old Roaring River sourdough bread and Bread of Life wheat bread. Farm to Market baguettes work great as well. **Vegetable broth can be substituted for chicken broth.

This divine recipe comes from my favorite "local foodie" and "farmers market junkie" - the lovely Emily Akins. Check out this festive holiday cake on her blog featuring Heartland Mill flour. I cannot stress enough the importance of using high-quality flour in your breads and baked goods. It makes a HUGE difference. Heartland Mill artisan flours are certified organic, locally grown, and locally milled. It is used by the finest midwest bakeries including Fervere at 17th and Summit. BADSEED is the only retail outlet in KC where you can purchase this fine flour.

Sweet Potato Gnocchi with Fried Sage and Shaved Chestnuts -
I think this is a great addition to your Holiday Feast especially if you have "anti-turkey" vegetarians at the table! The addition of ricotta cheese adds a certain lightness and fluffiness to your gnocchi, or fresh Italian dumplings. **Recipe attached.

They will discuss the damage and suffering caused by so-called Concentrated Animal Feeding Operations - the animal factories that produce most of the meat, milk, poultry and eggs in this country - with a special focus on Kansas. And for healthy and ecological solutions, they will also talk about the local, free-range, and organic alternatives.

LAWRENCE FRUIT TREE PROJECT MEETING

The LFTP Lawrence Fruit Tree Project is a co-operative group of pomiculturists who have organized themselves to establish community orchards, and teach folks how to grow and care for fruiting trees and shrubs. They also are setting up a fruit tree register to list existing neighborhood trees that are underutilized, so they can be cared for and harvested. Anyone is welcome who is interested in relocalized food security, environmental literacy, permaculture, fruit tree propagation, etc. Come to our meetings and help our grass roots organization grow!

N.E. SECTOR PLAN FOR LAWRENCE AT CITY COMMISSION

This planning document evolved from the 2008 battle over preserving the Class I & II prime farm land in the north-east Kansas River valley. The primary issues have been: proposals for warehouse and industrial uses on the farm land that would threaten our local and regional future food security, exacerbation of flooding for North Lawrence proper from more severe and frequent storms, the estimated $8 million cost to taxpayers for bringing City infrastructure to the area to subsidize private profits, and the existence of more appropriate industrial sites and zoning elsewhere in our community.

The N.E. Sector plan was supposed to regulate and limit industrialization of farm land, but over several edits, it has been weakened to the point of being ineffectual. The Citizens for Responsible Development has requested that the Industrial Section 3.2.1.4 of the Plan be the version from the third draft of the plan - to read more of the plan, go to N.E. Sector Planning Process, where you can click on the Third Draft and other materials. The City commission will be taking public comment at their meeting.

GLOBAL DEMAND FOR OIL DRIVING PRICES UP, DESPITE THE RE-DEPRESSION

"Despite weak demand in the U.S. and Europe, oil prices climbed this week to near $90 a barrel and gasoline prices have passed $3 a gallon on the West Coast and parts of the Northeast. Why?" This McClatchy Newspaper article suggests it's the commodity speculators fault - Remember $4 gasoline? Oil speculators are back. Another article in the Lawrence Journal-World blamed it on growth in Chinese manufacturing, a stronger Euro, and 93,000 new U.S. jobs in November - Price of gasoline could reach $3 per gallon by Christmas. No one dared mention peak oil.

But as the commodity that plays the central role in industrial economies, a more scarce and expensive petroleum is the real culprit. There have always been commodity speculators, currency fluctuations, and job swings. What's new since oil extraction peaked in 2006 is that rising petroleum prices are the real driver of these other economic factors, not the other way around. And rapid growth in Eastern economies, particularly in China and India, are triggering global demand for oil, while deflation in the value of the dollar equates to higher U.S. gasoline prices. Simple supply and demand.

EPA PLEDGES FAIR DECISION ON SUNFLOWER ELECTRIC PERMIT

As the 3 January 2011 deadline approaches when stricter EPA regulations on greenhouse gases take effect, the Director of Region VII EPA, Karl Brooks, has made it clear that his agency is watching very closely the ongoing permitting process for Sunflower Electric under the Kansas Department of Health & Environment - EPA Leader Pledges Fair Decision on Power Plant | GPACE.

Karl Brooks - "On Election Day, Kansas Gov. Mark Parkinson abruptly removed Rod Bremby, the state’s top environmental-protection official. It’s fair to say these two did not see eye to eye on Sunflower. [And] this nation’s air-quality laws are changing at the same time a new governor takes the reins in Topeka. Starting in January 2011, the biggest new coal-burning pollution sources will have to limit climate-changing emissions for the first time. Sunflower would burn so much coal that a state permit issued after Jan. 2 must impose greenhouse gas controls.

"If KDHE recommends Sunflower be permitted before Jan. 2, EPA will review this initial decision. EPA must scrutinize not just the language of any Sunflower permit, but the whole state decision-making process that produced a permit. Kansans should rest assured that this agency will make sure the rule of law has been faithfully enforced."

Meanwhile, the Kansas City Star reports that the rushed nature of the review process by KDHE seems to indicate a bias to get Sunflower Electric permitted before the EPA deadline - Permit process for coal-fired plant in Kansas draws criticism.
