We are still trying to save 4800 lbs. of zucchini and cucumbers that are in Trenton, Missouri (approx. 90+ mi. NNE of KC).  If you have a pick-up truck or van and can take 4 hours out of your day, we are desperate for your help.  PLEASE call me if you are available.  We can pay for your gas.  The zucchini would go to the pantry of your choice or you can take it to the St. Joseph Food Bank.
We will send directions if you are available - please tell everyone you know.  Due to lack of rain, we will be having serious crop failures soon.  These zucchinis and cucumbers are going to be precious for people in need.  There won't be anymore excess.

Wow!  It has been mighty HOT and mighty WINDY these past few days.  The drought continues and we farmers are keeping our fingers crossed that the forecasted storms blow in this evening.  We need rain BAD.  



Despite the heat, the URBAVORE crew has spent the better part of the week digging somewhere around 5000 bulbs of garlic!!!  (That's right, vampires stay the hell away from my farm!).  Believe it or not, the digging of the garlic was nowhere as strenuous as the planting of the garlic last Fall.  It was our first season in "no-till" vegetable production on new land.  We dug 5000 individual planting holes by hand because (due to the extreme drought) we were unable to dig furrows.  I kid you not, it was like chipping away at granite...the ground was that freakin' hard!!  Farmer Dan dug a number of planting holes with (then) 5 month old Percy strapped to his back, sleeping soundly...

Guadalajaran Swiss Chard Quesadillas
Serves 4   30 min Prep
From Vegetarian Times
  • 2 Tbs vegetable oil
  • 1 sm onion, chopped (¾ cup)
  • 2 cloves garlic, minced ( 2 tsp)
  • jalapeño pepper, minced
  • ¼ tsp cumin seeds
  • ⅛ tsp oregano
  • ¼ cup tequila/other cooking fluid
  • 12 oz. Swiss chard leaves
  • 8 6-inch corn tortillas
  • 1 cup grated cheese
  • Add cooked meat as desired
1. Heat oil in pot over medium heat. Add onion. Sauté 5 minutes. or until golden. Stir in garlic, pepper, cumin & oregano. Sauté 2 minutes. Add tequila. Simmer 1 minute, or until liquid has evaporated. Stir in chard. Cover, reduce heat to medium low. Steam 5 minutes, or until chard wilts. Uncover. Cook 3 minutes, or until liquid has evaporated.
2. Place 1 tortilla in skillet over medium heat. Sprinkle with 1/4 cup cheese. Top with 1/4 chard mixture & second tortilla. Cook 2 minutes per side, or until browned. Repeat with remaining ingredients. Slice into wedges.
Easy "Kohl" Slaw
This is a delicious and easy way to enjoy kohlrabi. It's a perfect side to grilled meat or fish. Serves 4-6. From About.com
  • 2 medium kohlrabi, peeled, shredded
  • 2 small carrots, shredded
  • 1 tbsp shredded onion
  • 1/3 cup white vinegar
  • 1/3 cup granulated sugar
  • 4 tbsp olive or canola oil
  • 1/2 tsp salt
  • 1/4 tsp celery seeds
  • 1/8 tsp pepper

Combine the kohlrabi, carrots & onion in a bowl. Combine the remaining ingredients & blend well. Pour over the shredded vegetables. Toss to coat well. Cover & refrigerate for at least 2 hours.

Nothing says "SUMMER!"  like the luscious taste of tomatoes and basil.   Typically, we have to wait until July to indulge in this warm weather pairing, but this season is a different story.  Make the trip to the market early this week to enjoy the delightful taste of fresh toms while they last and pick up a bunch of the herb the Italians once used to woo their prospective lovers.  Here's a great recipe  for strata using many of the ingredients you can currently find at the Westport Plaza Market.  This Wednesday, June 20th marks the official first day of summer and we would love to celebrate it with you.
